Grilled Watermelon Salsa

A unique, yet refreshing fresh salsa. Great for taco tuesday, or a great side dish

Ingredients
  

  • 1/4-1/2 Medium Sized Watermelon
  • 1/4 Cup Melted Honey Butter
  • 1-2 Tbsp Sweet BBQ Rub
  • 1/2 Diced Yellow Onion
  • 1 Diced Jalapeno
  • Juice of Lime to Taste About 1-2 Limes
  • 1/2 tsp Kosher Salt
  • 1 Small Bunch of Finely Chopped Cilantro

Instructions
 

  • Cut the watermelon into disks about 1 1/4 inch thick.  Cut each disk into 4 triangles.  You will need anywhere from 6-8 triangles for the recipe.  Leave the rind on each triangle of watermelon.  Preheat your grill to 450 degrees.  
  • Brush both sides of each triangle of watermelon with melted honey butter.  Sprinkle both sides of the triangles of watermelon with just a touch of your favorite BBQ dry rub.  I highly recommended something sweet such as my Sweet Paprika Dry Rub.  If you don’t have a BBQ rub, a simple sprinkle of brown sugar will do. 
  • When your grill is preheated, place each triangle directly on the grate.  Close the lid and let the watermelon cook for about 2-2 1/2 minutes on each side.  You are basically just getting grill marks.  Open the lid of the grill and remove the watermelon and let cool.  At this point the watermelon is a delicious snack if you don’t want to make the salsa.  
  • Once the watermelon has cooled, cut it off of the rind and dice into small chunks.  You will need 4 cups of watermelon.  Discard the rinds.  Placed the 4 cups of diced watermelon into a mixing bowl and add the other ingredients.  Start with the juice of just 1 lime, and add more after if you feel like it needs more lime flavor.  Enjoy!  This goes great on tortilla chips.
