Hearty Dutch Oven Mountain Man Breakfast

The perfect hearty breakfast for a camping trip, hunting trip, or a Saturday morning. This is one of the best uses for a dutch oven.

- 1 Can Cream of Mushroom Soup
- 1/4 Cup Milk
- 1/4 Cup Sour Cream
- 3 Slices Bread (Texas Toast is Best)
- 2 Cups Shredded Frozen Hashbrowns
- 1 tsp Seasoned Salt
- 1/2 Diced Red Bell Pepper
- 1/2 Diced Green Bell Pepper
- 1/2 Large Diced Onion
- 1/2 Lb. Sausage, Bacon, or Ham
Light a chimney of charcoal briquets. I usually get a whole chimney ready just in case. While the chimney is burning, cook your bacon in a frying pan. Set aside to cool. In a large bowl, scramble the eggs, whisk in the sour cream, and milk. Once everything is evenly incorporated, break, or cut the slices of bread into bite sized chunks. Add the chunks of bread to the egg mixture. Let sit for 15-20 minutes, stirring carefully every 5 minutes or so.
Add the seasoned salt, hash browns, onion, red pepper, and green pepper to the egg, and bread mixture. Cut or break the bacon into bite sized chunks. Add to the egg and bread mixture. Spray the inside of a 10 inch dutch oven with cooking spray. Don’t be shy about it.
Pour the egg mixture into the dutch oven, and put the lid on it. Arrange about 8-10 coals in a circle, the size of the bottom of the dutch oven on the ground, or in the fire pit. Place the dutch oven over the coals. Place another 12-14 coals on top of the lid of the dutch oven. Let cook for 40-50 minutes.
When the eggs looks like it is almost cooked through completely, sprinkle about 1 cup of grated cheese on top. Put the lid back on, and let cook for 5-10 minutes more. Remove the lid, serve, and enjoy!
NOTE: If you have access to an oven, when the cheese is melted, place the dutch oven inside of the oven on broil for a minute or 2 to get some golden color to it. It is completely optional though.Use bbq tongs to place the briquets. It’s much easier than using a shovel.If you need to add a few more briquets on top of, or under the dutch oven, that is fine. Some brands just don’t burn as hot, or as long as others. The key here is to be patient.
