Banana Nut Waffles

Delicious waffles with mashed bananas and chopped nuts. A great flavor and texture to start the morning off right

Ingredients
  

  • 1 Egg
  • 1/2 Cup Sour Cream
  • 2 Tbsp Melted Butter
  • 2 Mashed Bananas I use a fork or potato masher to mash them
  • 1 tsp Vanilla
  • 1 Cup Flour
  • 1 Tbsp Honey
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 Cup Crushed Roasted Walnuts
  • 1/2 Cup Chunky or Creamy Peanut Butter

Instructions
 

  • In a large mixing bowl, whisk the egg, milk, sour cream, melted butter, mashed bananas, and vanilla extract until evenly incorporated. Add the rest of the ingredients and mix until all ingredients are well incorporated.
  • Use a measuring cup to scoop some of the mixture onto a hot, greased waffle iron. 1/2-2/3 a cup of the mixture usually makes one waffle. Let the waffle cook according to the waffle maker instructions. I use my Belgian waffle iron for this recipe. This recipe usually makes anywhere between 4-6 waffles depending on their size. Top with your favorite syrup or jam. Enjoy!
  • **Mash your bananas until they are mostly smooth. A small chunk of banana here and there is totally fine.
