Pineapple Upside-Down Pancakes
Ingredients
- 1 Box Yellow or White Cake Mix
- 1 Can Pineapple Tidbits
- 1 Cup Brown Sugar
- 1/2 Cup Caramel Sauce Ice Cream Topping Works Great
Instructions
- Prepare the cake mix in large mixing bowl according to the package instructions. Preheat a griddle or pan. Spray the griddle or pan with cooking spray. Pour a small amount of cake batter on the griddle to form a pancake about 4 inches wide.
- Let the pancake cook until it starts to brown. Put pineapple tidbits on top of each pancake, and sprinkle with brown sugar. I usually do about 1 Tbsp per pancake. When the pancake it browned enough to flip, carefully flip it. Let the other side cook, until the pancake it cooked completely. Carefully remove the pancake from the griddle and flip back over onto a plate, so the side with the pineapple is showing. Top with a drizzle of caramel sauce, and enjoy!

This is probably one of the most difficult pancakes I have every made in my life, but my goodness, it was worth it! I love pineapple. One of the best ways to enjoy pineapple is in a pineapple upside down cake. A good portion of my day is spent thinking about breakfast foods. I thought to myself that there has to be some way to make a breakfast style pineapple upside down cake. Then the idea hit. Let’s turn it into a pancake!
The first few were kind of a mess, and didn’t stay together too well, but as I made more, they worked out. Holy moly! They were so good! On top of being incredibly delicious, they are absolutely beautiful!
One of the most delicious parts about this recipe, is that you use a cake mix instead of a pancake mix. Yep, you can totally pancake a cake mix, and it’s incredible. You can waffle cake mix too! You can make this recipe with a pancake mix, but it tastes even better with cake mix.
