Macaroni Salad

A creamy, tangy, macaroni filled salad. A unique, and delicious flavor perfect for a family bbq or side dish.

Ingredients
  

  • 4 Cups Dry Macaroni Noodles
  • 1 Cup Mayonnaise
  • 1/4 Cup Apple Cider Vinegar
  • 2/3 Cup Sugar
  • 3 Tbsp Dijon Mustard
  • 2 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 1/2 Diced Yellow Onion
  • 1/2 Diced Cucumber
  • 1 Diced Red Bell Pepper
  • 1/2 Cup Shredded Carrot

Instructions
 

  • Prepare macaroni noodles according to package instructions. Rinse and Drain. In a large mixing bowl, add mayonnaise, apple cider vinegar, sugar, dijon mustard, salt, and pepper. Mix until well combined.
  • Add the onion, cucumber, bell pepper, shredded carrot, and macaroni noodles. Mix until well combined. Cover with plastic wrap, and chill in the fridge for 1-2 hours. Enjoy!

Macaroni might as well be the face of the United States. We basically inhale the stuff. Not only is macaroni great for mac and cheese, it’s perfect for macaroni salad. Some people might better recognize it as mac salad. There are quite a few varieties of mac salad out there, but my favorite way to have it is with a nice vinegar and mayo base.

This ain’t normal vinegar that I’m talking about. I’m talking about apple cider vinegar. Apple cider vinegar adds a nice sweetness to go with the tang of the vinegar taste.

Another one of my favorite touches for mac salad, is the crunch of the veggies. Cucumber, red bell pepper, and carrot give the perfect result. This is an awesome side for any BBQ or family party. Enjoy!
